A gluten free banana bread that is moist yet holds its shape. This is a baseline for a recipe that you can take and transform into seasonal alchemy. You can top with flower petals in the spring while adding splashes of rose water or orange blossom to give it an elegant finish. In the summer, you will want to add more cooling notes so taking out the cinnamon and other spices that are normally warming and replace with just a simple vanilla and nut finish. Then fall and winter, getting festive with all the spice and colors that are around you.

Wets
3 Bananas - 2 smashed and
1 for the topping sliced in half vertically
1/3 cup olive oil
1/2 cup honey or maple syrup
2 eggs
2 tsp vanilla extract
1/4 cup oat milk (I used homemade oat milk and it worked just fine)
Drys
1/2 cup gluten free rolled oats
1 3/4 cup gluten free all purpose flour (I use bobs)
2 tsp baking powder
3 tsp cinnamon
1/2 tsp nutmeg
1 tsp cardamon powder
punch of salt
Add ins:
3 tables chocolate chips
Handful of nuts or seeds if you desire
Method
Oven should be at 320 degrees F or 160 degree C
Line a basic loaf pan with parchment paper- cut to size
In a bowl, mix the honey and oil together. Once combined add the eggs, milk, vanilla, and the 2 bananas (make sure they are smashed. You can use the bottom of a jar or a smasher).
In a smaller bowl, whisk all dry ingredients together
Add all ingredients together and with a spatula start to mix. Add in the additional ingredients if using and then pour the batter into the pan
Top with a sprinkle of oats and the sliced banana in a design you desire
Bake for at least an hour, it may be a little longer depending on your oven. Check with a skewer or a tooth pick by placing it through the bread in the center. If if comes out clean then your bread is finished.
There is a trick to get the rustic finish of color on the bread. If you would like to do this, make sure you do not walk away otherwise the bread can burn.
Turn the oven now to a low broil with the light on. Keep bread in there for a at least 1-2 minutes. You will be watching to see the color change. If your oven doesn’t have a view that is easy to see, just keep the door open slightly so you can watch. It’s a very fun process to watch the bread change color.
One done, let it cool for at least 20 mins. Carefully pull out of the pan and place onto a cutting surface. Slice and eat alone of I like to put some of my cinnamon ghee on top.
